Madras Spaghetti
1 1/2 small green hot chili peppers chopped (I use one jalapeno, seeded and chopped)
1 sweet red pepper, diced small
3 T corn oil
1 T chopped fresh coriander leaves
1/2 yogurt or sour cream
1 lb spaghetti or capellini
Boil pasta per package instructions and drain. Saute the red and green pepper in corn oil over low heat until the peppers just start to brown. Add to large bowl. Add coriander leaves, pasta and yogurt or sour cream and mix well. Serves 4 - 6.
