Fruit Cobbler

 Fruit Mixture

6-7 T tapioca flour

6-7 cups peaches, sliced (or other fruit such as blackberries)

1 cup sugar

1/4 tsp cinnamon

Cobbler Dough:

1/2 cup butter

1 cup sugar

2 cups flour

1.5 cups milk

2 tsp baking powder

1 tsp salt

Cobbler topping:

1.5 cups sugar

2 T cornstarch

Cinnamon

1/2 cup boiling water

Preheat oven to 375 degrees. Mix together fruit mixture and pour into a buttered 9 X 13 inch pan. Mix together cobbler dough and spread over fruit mixture.  Stir together cobbler topping and sprinkle over the cobbler dough.  Pour boiling water evenly over cobbler.  Bake for 1 hour 20 minutes or until cobbler dough is cooked through and top is golden.
