Peanut brittle

 3 cups sugar

3 tsp butter

1 cup corn syrup

1 tsp salt

1/2 cup water

2 tsp baking soda

3 cups raw peanuts

Boil sugar, corn syrup and water to 310 degrees. Add peanuts and stir continuously.  Cook until it turns a brownish gold (about 5-8 minutes.)  Remove from heat  and add butter, salt and baking soda while stirring vigorously. Pour quickly onto parchment paper or nonstick cookie sheet and let cool.

Microwave Peanut Brittle

1 cup sugar

1 tsp vanilla

1 tsp butter

1/2 tsp salt

2 cups raw peanuts

1/2 corn syrup

1 tsp baking soda

Mix sugar and corn syrup. Add peanuts and stir well. Microwave on high for 8-10 minutes stirring well after 4 minutes. Add vanilla and butter. Microwave on high for 2 minutes or until nuts turn brownish gold. Add baking soda.  Stir and spread on buttered cookie sheet.  Sugar and peanut mixture should reach 310 degrees.
