Fig Jam

5 cups of prepared figs
1/4 cups bottled lemon juice
4.5 cups sugar
1-2 T no sugar pectin

To prepare figs:
Sprinkle figs with baking soda in a pot.  Pour boiling water over figs and let sit for 30 minutes.  This will blanch the figs and neutralize the sap which can irritate the skin.  Peel the figs, and chop, or scoop out flesh from figs.  At this point, the figs can be frozen in a tub, and used later.

Combine figs, sugar and lemon juice in large pot and bring to rolling boil.  Add pectin and boil 1-2 minutes.  Turn off the heat and fill prepared 1 cup jars, and cover with lids.  Process 5 minutes in boiling water canner.   Makes about 7 cups of jam.
