Dry Roasted Cashews

1 c raw cashews
1-2 tsp water
1/2 tsp coarse salt
Mix cashews, salt with 1-2 tsp water in a bowl. You want to moisten the cashews, but not have any water in the bottom of the bowl. I use a clear plastic tub with a lid to make this recipe. Let the cashews site overnight, shaking the container every once in a while.
Pour the cashews on a cookie sheet and bake at 275 degrees for 20-30 minutes. Watch your cashews carefully, as they can burn quickly. I make this recipe in the toaster oven on "toast" setting, to both top and bottom elements are heating. Stir cashews while toasting to ensure an even color.
