Brownies

4 oz unsweetened chocolate, melted in a double boiler
1 stick of butter (4 oz)
2 tsp vanilla extract
1/2 tsp salt
2 c sugar
4 eggs or 1 cup egg substitute
1 c flour
2 cups walnuts, chopped into large pieces, or pecans
1/3 to 1/2 c mint chocolate chips
Heat oven to 350 degrees. Line a 9 x 13 inch pan with aluminum foil (shiny side up). Butter the foil.
Mix softened butter and sugar together, add melted unsweetened chocolate. Add eggs slowly so that they do not curdle. Add flour and salt, mix with mixer for 1-2 minutes so everything is combined. Fold in the walnuts or pecans.

Bake for 30- 35 minutes, testing with a wooden toothpick for doneness. Don't overbake or the chocolate in the brownies will be burnt.
Remove from oven, and sprinkle top with mint chocolate chips. Let mint chips melt, then spread with a knife to make a thin coating on the brownies. Let cool completely, and refrigerate to make slicing easier. Place a cutting board on top of the pan and flip the brownies upside down, then right side up. Fold down the aluminum foil, and slice into squares. Peel the brownies off the aluminum foil, and they are ready to serve.
