Pot Stickers
1 lb fresh ground pork
2 T soy sauce
1 T dry sherry
1/2 tsp sugar
2 green onions, chopped
1/2 tsp grated ginger
2 cloves of garlic, crushed
8 water chestnuts, chopped
1 tsp dark sesame oil
1 egg
1 T cornstarch
Wonton wrappers, 1 lb package
Chicken stock, 2 cups total, divided
Mix all ingredients together. Fill wrappers. To seal the edges, brush the edge with water. Squeeze out all the water before frying, or your pot sticker will expand and break. Fry in batches in 2-3 tablespoons oil until brown on all sides. Pour 1/2 cup chicken stock in the pan, and cover. Simmer 9-10 minutes to make sure your pork filling is fully cooked. Serve with soy sauce or other any other sauce that you like.
Makes about 50 potstickers, which is the number of wontons in a 1 lb package.
