Peanut dipping sauce

3 tablespoons chopped shallot
1 garlic clove, minced fine
1/4 teaspoon dried cayenne pepper flakes
1 T dark sesame oil
3 tablespoons water
1 1/2 tablespoons peanut butter
1 tablespoon Hoisin sauce
2-3 teaspoons tomato paste
3/4 teaspoon sugar

To make dipping sauce:
Cook shallot, garlic, and red pepper flakes in oil in a pan over moderate heat, stirring, until shallots are cooked, about 4 minutes. Add the remaining sauce ingredients. Simmer for a minute, then cool. Keeps in the fridge for about a month. Serve with spring rolls, or egg rolls.
