Panzanella

2 tomatos, chopped into bite size pieces
1 cucumber, peeled, seeded and chopped into chunks
1/4 of a red onion, sliced thin
1 cup fresh basil leaves
1/2 c olive oil
3 T balsamic or red wine vinegar
salt and pepper to taste
6-8 slices of day old good country style white bread, cut into 3/4 inch chunks
1/4 c pitted kalamata olives
2 T capers
fresh mozzarella, cut into 3/4 inch chunks (Optional)

Cut day old bread into chunks. Mix all other ingredients with the oil & vinegar. Add the bread, and refrigerate 1 hour before serving. Add any other italian ingredient that suits you, such as thin sliced italian sausage meats, or parmesan cheese. Serve over a salad of romaine lettuce if that suits you.
