Special Fruitcake
2 2/3 c white raisins
2/3 c candied pineapple, chopped
2/3 c candied red cherries
1 cup dried fruit (apricots, dates, dried figs, etc)
Batter:
6 eggs, beaten
1/2 lb butter, softened
2 1/2 c sugar
2 1/2 c flour
1/2 tsp salt
1 1/2 tsp ground cinnamon
2 T vanilla
4 cups pecans
Mix dried fruits together, and pour 1/2 c sherry on the fruit. Mix in, and let soak overnight.
Mix butter, sugar together, add eggs, then flour and remaining ingredients, and marinated fruits.
Pour into a large pan. Bake at 350 degrees, stir the mixture every 10 -15 minutes. The fruitcakes is done when the eggs are no longer stringing. Pat into loaf pans while hot. Allow to cool, unmold and slice. The fruitcake loaves can be frozen, wrap with several layers of plastic wrap before freezing.
