Baked Yellow Squash
5 lbs yellow squash
3 T melted butter
2 eggs (or 1/2 cup milk)
1 cup bread crumbs
1/4 c sugar
2 T dehydrated onions
1/8 tsp black pepper
salt to taste
Wash and trim squash, and cut into 1/2 inch pieces. Fill a large pot with water and boil squash in batches, until tender, 3-5 minutes. Drain squash well, mashing the yellow squash. In a large bowl or food processor, combine all ingredients, mixing well. Place in a 9" X 13" casserole dish (or a 3 qt dish). Bake at 350 degrees for 15-20 minutes. Serves 8-10.
I sometimes top with shredded cheese when baking.
This freezes well also.
Variations:
Use white pepper instead of black pepper.
Use whipping cream instead of milk.
