Stuffed Hot Dogs
Every Saturday night when we were kids, my Mom used to make hot dogs and pork & beans for dinner. It was an easy meal after a busy day of cleaning house. Instead of the usual hot dogs, she occasionally made stuffed hot dogs.
1 pkg hot dogs
1-2 hard boiled eggs
2-3 tsp sweet pickle relish
1 T chopped onion
1 slice of bacon per hot dog, partially cooked
Cut a slit lengthwise in each hot dog, not cutting all the way through the hot dog. Chop and mix the hard boiled egg with the pickle relish and onion. Stuff the hot dogs with the mixture. Wrap each hot dog with a piece of the partially cooked bacon and secure with toothpicks. Broil the hot dogs until the bacon is crisp, which should take no more than 5-7 minutes. Alternatively, these could be grilled.
