Green Pork Chili
1 lb tomatillos
2 T olive oil
4 lbs boneless country style pork ribs, cut into ½ inch chunks
salt & pepper
2 cans diced green chiles (4 oz each)
1 T dried Mexican oregano
1 large onion, chopped
1 cup water
5 garlic cloves crushed
2 jalapenos chopped
1/3 cup cilantro for garnish
shredded cheddar and lime wedges
In a blender, puree tomatilllos until smooth. In a 5 qt dutch oven, heat oil. Season pork with salt and pepper, brown pork 6-8 min per batch. Add tomatillos, onion, garlic, water, chilis. Boil and then simmer 2 hrs until tender. Stir in cilantro before serving, serve with shredded cheddar cheese and lime wedges. This is great in tortillas to make a sloppy soft taco. The chili can be frozen for later use. This can also be made in a crock pot. After browning the pork, place all ingredients in crock pot. Cook on low for 8 hrs or on high 4 hours.
