Banana Nut Bread
This is from Betty Crocker's Cookbook circa 1978, that I bought before I got married. It has all the classics, and has been an old standby in my kitchen.
2 - 1/2 c flour
1/2 c sugar
1/2 c brown sugar, packed
3 - 1/2 tsp baking powder
1 tsp salt
3 T vegetable oil
1/3 c milk
1 egg
1 c chopped nuts (walnuts or pecans)
2-3 ripe mashed bananas to make 1 - 1/4 cups
Preheat oven to 350 degrees. Grease and flour a 9 X 5 X 3 inch loaf pan or use two 8 x 4 x 2.5 inch pans. Mix all ingredients, beat 30 seconds with electric beater. Pour into pan(s). Bake until a toothpick inserted in the center comes out clean. I usually use a 9 x 5 pan which takes 80 - 85 minutes to bake. The 8 x 4 inch pans take about 60 minutes to bake.
