Yellow Rice

This is a quick easy rice that can be served with Mexican dishes
2 T achiote seeds
2 T olive oil
1/2 onion, chopped rather fine
1 c rice
2 c water
Saute the achiote seeds in oil for several minutes, remove the seeds and discard. Add the rice and saute until rice becomes opaque, then add onion. Cook until the onion becomes translucent. Add the water and bring to a boil. Reduce heat and cover, cook about 25 minutes or until rice is done.
Serve with tamales, enchiladas, chilaquiles.
