Tiramisu
There are lots of recipes for tiramisu. Unfortunately, we can never find the one we're looking for when we need it. This one is not too hard to make, and is tasty.
1 - 2 packages of ladyfingers
3 fluid oz strong black coffee or prepared instant espresso
3 fluid oz brandy or rum (or you favorite liqueur)
1 1/2 lbs mascarpone cheese at room temperature
1 1/2 c powdered sugar
1/4 to 1/2 c cocoa powder unsweetened
Layer bottom and sides of a 9 inch round pan with ladyfingers. Blend the coffee and rum/brandy/liqueur and sprinkle on the ladyfingers. Mix the mascarpone and sugar and beat until the sugar dissolves. Spread one third of the cheese mixture on the ladyfingers, then lay another layer of ladyfingers. Repeat one more layer, ending with cheese on top. Sprinkle the cocoa on top using a strainer. Cover and refrigerate for at least 2 hours.
