Caesar Salad
This recipe is one I made up. It is loosely based on Julia Child's recipe, but is simpler.
2 parts mayonaisse
1 part roasted garlic olive oil
several squirts of lemon juice
Mix up the dressing ingredients with a whisk. If you have lots of romaine to dress, make more, if making only a few servings, I usually start with 2-3 T of mayo and 1 1/2 T olive oil. Using the roasted olive oil in a bottle saves you the step of sauteing garlic cloves in olive oil on the stove, and then having to wait around while it cools.
Romaine - either hearts of romaine or a head
Wash and chop up desired amount of romaine.
Toss dressing with romaine.
Add shredded parmesan cheese, and toss with the salad. I start with roughly 1/4 cup for a 2-3 person size salad, and you can always add more if needed.
Top with croutons, homemade or from a box.
For a full meal, add cut up roasted chicken from the deli at the grocery store. There always seems to be some left over from that whole roasted chicken.
