Apricot - Date Bread
1 1/2 c flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 c sugar
3/4 c milk
1 egg, beaten
1 T grated orange rind
2 T melted shortening or butter
1/2 cup diced dried apricots
1/2 c chopped dates
1/2 cups chopped nuts (walnuts, pecans)
Heat oven to 375 degrees. Combine one cup of flour, baking powder, soda, salt and sugar. Blend milk, egg, orange rind and shortening, add to flour mixture. Stir together the remaining 1/2 cup flour with fruits and nuts, tossing to coat them. Add to batter. Bake in preheated oven for 50 minutes in a greased 9 x 5 x 3 inch pan.
